Roasted and Smoked Veggies
Roasted veggies are great to add to any meal and make a great addition to tomorrows lunch!
Ingredients (for 2-4 people):
- 1 squash, washed and sliced
- 1 white onion
- 1 red bell pepper
- 1 orange bell pepper
- 1 package cherry tomatoes (or 2 regular tomatoes sliced)
- 1/2 cup of carrots
- 1 cup Brussel sprouts
- You can add in a few strips of bacon if desired for more flavor
- Pepper – to taste
- Salt – to taste
- Minced Garlic – 1/3 a cup
- Olive Oil – about 2-3 TBSP
Pre- Game (10 min)
- Start your Traeger or smoker grill on the smoke setting, once a fire is established, increase the temperature to high
- Wash and cut all the veggies to your liking
- In a mixing bowl combine the olive oil, salt, pepper, garlic
- Toss the veggies in a bowl until covered in oil and seasoning
- Place foil in a baking sheet
- Place veggies on baking sheet
Main Event (30 min)
- Once the temperature reaches high, place veggies on the grill
- Set a time for 15 minutes to flip halfway through
- Cook a total of 30 min
