Roasted and Smoked Veggies

Roasted veggies are great to add to any meal and make a great addition to tomorrows lunch! IMG_8743 Ingredients (for 2-4 people):
  • 1 squash, washed and sliced
  • 1 white onion
  • 1 red bell pepper
  • 1 orange bell pepper
  • 1 package cherry tomatoes (or 2 regular tomatoes sliced)
  • 1/2 cup of carrots
  • 1 cup Brussel sprouts
  • You can add in a few strips of bacon if desired for more flavor
  • Pepper – to taste
  • Salt – to taste
  • Minced Garlic – 1/3 a cup
  • Olive Oil – about 2-3 TBSP

Pre- Game (10 min)

  1. Start your Traeger or smoker grill on the smoke setting, once a fire is established, increase the temperature to high
  2. Wash and cut all the veggies to your liking
  3. In a mixing bowl combine the olive oil, salt, pepper, garlic
  4. Toss the veggies in a bowl until covered in oil and seasoning
  5. Place foil in a baking sheet
  6. Place veggies on baking sheet

Main Event (30 min)

  1. Once the temperature reaches high, place veggies on the grill
  2. Set a time for 15 minutes to flip halfway through
  3. Cook a total of 30 min
  4. Enjoy!
